He probably didn't realize B5 was safe for his knight to retreat to lol.

And TIL what an Oxford gambit is, normally I would just trade knights but here that would have pinned my other knight for a pawn capture.

Oh black could have played pawn C5 too.

When checkmate is too boring so I played around with capture every last and try to promote queens before the time runs out:

if you can checkmate, just win the game and leave, there's a large chance of stalemate. specially in your rating

I don't care about winning. But in that game I noticed I was going to win on time as well so I did.

Rage quit? At a 500 level maybe your opponent just made a mistake and decided to try again in a different game.

Nb5 would hang the knight to the bishop on f1

Right, its pawn C5 thats the right move for black against that.
