how to change pre move settings so it’ll cancel if opponent does alternative move

Anytime I watch online chess, people click pre moves they want to happen if opponent moves how they predict…. But if opponent does something else, the pre moves erase and no piece moves. But for me, I can only click one pre move and no matter what happens my piece will move. I could pre move a capture but opponent moves that piece and my piece will still move to that now empty square.

You can't change anything. The only time a premove doesn't execute is if any of your chosen premoves end up being illegal. Captures are not tracked, it's only the move to that square, so as you noticed, if the piece moves then you'll move there.
