Meaning that the only reason I’m unable to capture a Queen with my King would be because doing so would also put me in check? (due to another piece’s position)

Your king must never be under attack by another piece after your move, whether it’s when moving the king, moving another of your pieces, capturing another piece in anyway, or even attacking the opposing king. If you’re unable to capture a queen with your king it means doing so would put your king under attack by one or more pieces, and is an illegal move. Hope that explains it a bit better!
