...Why would white move the knight there? I always assume that for a puzzle the opponent should make the best move, but I don't understand why they wouldn't just move the bishop rather than lose the knight? It has safe squares? What at all is gained by this knight move compared to literaly any other move?

The knight is going to be lost, regardless. Moving the bishop loses the knight too.
With the knight move white picks up another pawn in the process.
