1-0 or 0-1

Ya know, it has occurred to me, with as many players that play on this site, the likelihood of ever playing the same player again is remote.

I wouldn't say "remote" but it doesn't happen very often. I think it depends on the pool you play in. Some pools like five minute blitz probably have tens of thousands of active players. It is unusual to see the same opponents.

Other pools like some of the variants may only have several hundred. I would guess those players play the same opponents pretty frequently.

I've played a number of players twice in random 10/0 games. So it's 1-0 or 0-1 or 1/2-1/2.

1-0 means white won, 0-1 means black won, 1/2-1/2 means drawn

0-0 means both White and Black got disqualified from a tournament game for some reason.

0-0 also means kingside castle

That's o-o, not 0-0.
