Use the larsen or KIA with white

You can play pretty much whatever you want.  Keep mixing things up until you find something that you like, and then you can stick with it.  I personally enjoy the Reti, KIA, English, Ruy Lopez, Open Sicilian (from both sides), Caro, Scandinavian, Two Knight's Attack against the French and Caro, etc.  If you're interested in any of those, I can give you resources I used for them.  But it really just comes down to what you enjoy.

Use an opening that you are familiar and comfortable with or, if you're unfamiliar with openings we teach juniors these for starters

Giuoco Piano 1.e4 e5 2.Nf3 Nc6 3.Bc4 Bc5

Ruy Lopez 1.e4 e5 2.Nf3 Nc6 3.Bb5

Queen's Gambit Declined 1.d4 d5 2.c4

Sicilian Defence  1.e4 c5

and then move to whatever the individual feels familiar and comfortable with.

Recommended reading would be...

The Mammoth Book of Chess by Graham Burgess

It covers all aspects of the game.

I recommend as white the London System or Queens Gambit. Both are really solid as white. As black against e4 French or Caro Kann are great and against d4 I'd go Kings Indian or Dutch

I know you are a lopez player so maybe the slow Italian or even scotch gambit.
