I’d just play the Italian, especially the Slow Italian (Giuoco Pianissimo). It gives you normal, solid development with Nf3, Bc4, d3, and then common plans like c3, Re1, and Nbd2. Sometimes it stays slow and positional and sometimes it opens up later with breaks like d4 or f4 so you get both sides of chess. It also scales really well from beginners to strong players to top GMs, so you definitely won’t outgrow it.

Imo - the Italian is an excellent opening to study and develop, especially if you take a look at the Scotch gambit, which kind of goes in tandem with the Italian game opening. The only drawback is that most people are familiar with it, and so can defend against it accurately. A lot of people on this forum seem disdainful of the London opening, but I think it's a good idea to also know the London, and especially the Jobava London leads to some good possibilities for White.

I wouldn’t call the Italian a “beginner opening.” It’s played at all levels including top GMs. The main point is that it teaches good habits like development and piece coordination. The Ruy Lopez and Queen’s Gambit are also good but for an 1100 player they don’t really give anything fundamentally different in terms of learning.
