Yes, you need to write chess notation in a chess score sheet.

8.1.1    In the course of play each player is required to record his/her own moves and those of his/her opponent in the correct manner, move after move, as clearly and legibly as possible, in one of the following ways:

8.1.1.1    by writing in the algebraic notation (Appendix C), on the paper ‘scoresheet’ prescribed for the competition.

If the organizer doesn't provide scoresheets, you can use your notebook.

"you can use your notebook"

Only if that notebook contains no other information like previous games.

'11.3.1    During play the players are forbidden to use any notes, sources of information or advice, or analyse any game on another chessboard.'

As long as you're not looking at the other games, you'll probably be fine. In a FIDE rated event, it's probably best to have a single sheet out.

If the tournament was US Chess rated, have a notation book with games in it is acceptable and commonly done, again, as long as you aren't looking through the games.
