First time I use an en passant in queens gambit because the opponent sacced all his pawns protecting the gambit pawn, and his bishop in the middle was going to get too much staying power with a double rank pawn move.

Why would he quit??? You missed the obvious Nxb5 capture for two moves and he had plenty of oomph left in the position. The chess.com computer said you were only -0.77 ahead when he threw in the towel. That's how people don't learn how to struggle on in a bad or lame or even marginally worse position. Playing until it's truly hopeless is the way to improve.
