As far as "respect" goes, I believe that is in the perception of the person sitting accross the board. One may take it as a sign of "respect" to resign while another would take it as a sign of "respect" to allow the checkmate. The person sitting accross the board may have quite the opposite outlook. Deciding which would be perceived as respectful is a rock and a hard place and one that you always have a 50/50 chance of getting right. I'd say that it would be in the manner in which each action is taken whether or not one would perceive one or the other as respectful or otherwise.
I recently finished a game where I had a King and Rook. Checkmate is inevitable. I certainly wish that my opponent would had simply resigned and allowed me to move on to the next game. His position was unwinnable against anyone who understands this very basic checkmate and the next 4 or 5 moves would demonstrate whether or not the opponent understands the principle.
To me, if your objective is to win, it is pointless to continue a game where checkmate is inevitable. I resign, send a trophy and get on with my life.
