to answer more directly though, i think it is fine to play lower rated, but probably not toooo much -- as others have observed, that may leave your mistakes unexposed. i've known people who play against lower rated players, but they play against their level too, and it seems to be fine
that said, playing against them in the way you described hardly sounds like a good idea.

No mate - don’t only play weaker players, but it’s absolutely fine to do. Otherwise chess streamers wouldn’t go and do rating speed runs!

What is chess for if you don't play with your friends?

You really should try to play your best against any opponent. Let your friends see how the game should be played, they might learn to play better. You can give time odds to make the games more competitive.
