Other day, I was playing in an OTB tournament, last round, my opponent didn't show up, I won the game, but this game doesn't count for rating adjustment, just got me one more point in the tournament... I think that because I was unrated in this tournament, my opponent (rated) didn't want to play a game that did not worth rating...

If you are unrated, I assume, you would get initial (1000?) rating. So, your opponent would get some points anyway.

It depends on what organization rates but FIDE doesn't give an initial rating. Games against unrated players are unrated in that case.

No, when a rated player plays a unrated player in OTB the game does not points for rating.

but when the unrated plays a rated player, this game matters for initial rating calculations.

If the initial rating calculation is above 1400 then Fide will publish the unrated player as "new to the list"
