FIDE is international and gives titles like FM, IM, GM.
NM is "national master" and would be given by a national federation (like CFC in Canada or USCF in United States).
I don't know how you get a NM title in Canada. I'm sure you could google it. Obviously you will have to play in sanctioned OTB tournaments.
Now to FIDE. FM is a rating of 2300. Of course to increase your FIDE rating you have to play in FIDE events (which may be hard to find in Canada).
IM and GM are different because you can't get them only for your rating, they're based on "norms." The short answer is a norm is like a tournament performance, and you get an IM norm when you score as well as an IM is expected to score in a tournament against other titled players. If you can do this 3 times you get the title. Same idea for GM. Finish a tournament like a GM would 3 times and you get the title.
There are many restrictions such as how many rounds, how many countries are represented, the time control, etc. You can also easily google this if you want the full details.
