I have this one, 'Calculate Like a Grandmaster: Learn from the World-Class Attacking Players' published in 2010 . but managed to read the first chapter only, about Tal. Nicely written. :)

I have used this book too, and it's really very good. A modern classic on the art of attack in chess !

1700+ - most examples are not super-easy, but the organization and the material are good.
I must confess I don't recall the chapter "destroying a defensive knight" but I'm glad you enjoy the book.
As far as the rating range I'm sure anyone would find the book useful, although the publishers asked me to aim the book mostly at 1600-2000 players even very strong players need to refresh their knowledge of attacking ideas from time to time, I certainly did!
