There are 1721 GM's in the world. One of the requirements of getting a grandmaster title is to have achieved a rating of over 2500 in your lifetime. Assuming quite a few are no longer at that level, probably about a thousand.
On chess.com there's probably many more, but most of them aren't actually 2500 over the board, more like IM/FM-worthy players.
