How to create a casual work tournament?

I would appreciate any advice on a format for creating a casual chess tournament in work for approximately 18 casual players.

I originally thought of a Swiss tournament, the only thing I need to factor in is the ability for compete beginners to be able to join, play a couple of games, and then have the ability to forfeit and it doesn’t interfere or mess up any future pairings.

Is it possible to create a tournament (that isn’t a straight knock out tournament) that allows people to play multiple games but also doesn’t get screwed up if people randomly decide to stop playing?

Or do I just need to tell people that they can only join if they can commit to a minimum of X games?

I initially thought of a Swiss style tournament where everyone plays 1 opponent (2 games) per week for day 6 weeks, and the winner after 6 weeks (12 games) is the person with the highest number of points (1 pt for a win, 0.5 for a draw and 0 for a loss) but would this still work if 2-4 people decide to call it quits half way through and we’re left with an uneven number/pair?

@OTBChump thanks. It’s just because each person would only play up to 6 games, I felt a bye would be too much of a free win lol to just give to someone. But it’s not their fault either if their opponent bails... 🤔 no other alternative? Even a different tournament format?
