Focus on improving and stop looking at elo.
Ask yourself what you are doing to improve, what is making your performance worse. I recommend you stop playing bullet chess and blitz, when you reach 2000 in rapid chess you can consider playing blitz again if you want.
Bullet chess decreases your ability to concentrate, stop it. Bullet chess is only fun, if you want to improve do not play bullet under any circumstances.
Improving your accuracy and decision-making through practice, analysis and study can help you become more competitive against stronger opponents.

First, there seems to be no actual opening going on as black. 1...e6 does not go well with g6. This creates "holes" on the dark squares, that can become inroads for your opponent's pieces. Note that in openings with g6, black also plays d6, which keeps pawns away from e5 and lets the knight go to f6, the best square for the king's knight.
Second, you seem to have no interest in developing your pieces as quickly as possible. It took way too long to get your queenside mobilized. Until you complete piece mobilization, it's like you're playing down by those unused pieces.
Third, there is a tendency to hang pieces or not take advantage of an opponent's hanging piece.
1200-1300 players aren't all that good. It's just that your play is sloppy and way too fast. I'd suggest playing slower games and avoid playing anything less than half an hour per side. If you slow down, look at the pieces and the way they interact, you will start to see things that are flying by now without being seen at all.

This game I let my guard down, because I was up points and 3 min games are more a casual thing to me. This game felt to me like my opp to easily and quickly countered. If you look at it they knew 6 moves in advance were the final postion of the knight, queen combination would come together for checkmate and there was no hesitation or time taken to calculate imo.

To be fair this was blitz and we are both 600 to 700 elo here. I play better in rapid then blitz, but this game felt interesting...

The pool of players here are many times stronger than their elo ranks. I also keep coming up against players with 20,000 plus games played. I feel theres a major amount of players who are advanced and simply holding eachother from ever advancing. I feel like theres never a game where I can play and win without a near perfect game. I generally play at around a 80% accuracy. Thats more than enough to win at my current rapid elo rating 1230. It takes the joy out of chess when you have to nearly play like a god to squeeze out a win or a draw. What's going on? Are people using the chrome book engine tool? Did everyone in 1200 suddenly start playing at 1600 skill..?
it's not that difficult to beat those rating gap (exceptions aside).. look at those blunders. these people play automatically, blindly.. without even planning 2 moves ahead..
to get upperhand, you just need to visualize the next a few moves as if they were played. decide if you like the last position and then play..
^ see how a simple italian game could take a wrong turn quickly.. this is an average 1300 play
There is nothing special about 1200-1400 just because you have hit a roadblock doesn't mean your opponents are strong... It means you need improvement to continue further
I looked at your recent rapid games and your opponents are not playing very well... There are plenty of mistakes being made by both sides

i think people in that rating range hang their pieces every other move and you should just chomp on their hanging pieces

Play chess for fun, or play it seriously
. Going into the game, know which one you are going to do. I've been so busy lately I haven't been able to play seriously...but when I do play seriously, I study games, watch yt videos, really analyze everything, spending a few hours a day on chess, and my rating quickly shoots up out of nowhere (look at my account lol)
Even though for the past month I've been around 1250, I think if I sat down and followed my own advice (should I have the time lol) I could advance at least a few more hundred rating points.
