That game would probably be a draw every single time :). Instead of mating the king you'd ought to just capture him then go after the other king.
If just for grins and giggles you could change one chess piece or remove a piece for more of another (ex: Get rid of the bishops for more knights), what would you do?
I would personally like to see the idea of the "Prime Minister" piece that is incorporated in some chess variants in the place of the rook. This piece can move like a knight AND a bishop. Quite deadly
