I would allow both players to make the same number of moves and require the king to be captured instead of checkmated. If both kings are captured, the result is a draw. In that variant, a check could be ignored. For example, if white threatens to capture the black king, black could respond by threatening to capture the white king. If white then captures the black king, black could obtain a draw by capturing the white king. However, if black threatens to capture the white king, and white does not protect his king, black can then win by capturing the white king. In both scenarios, both players have made the same number of moves.

I would not want to change any rule of chess but if i had to it would be that when we queen a pawn we cannot promote to a bishop. That would cause the least harm to the game.
