Is it cheating if i start learning about an opening once i see an opponent use it.

I do this all the time. In fact, it's the main reason I play daily games.

Obviously, I wouldn't do this in a real time game, but it's a great way to learn openings by starting daily games and studying the opening as the game goes on.

For opening learning you could just play a top-strength bot. It knows all the openings and will respond accordingly. Because with humans even in daily no guarantee a player would be picking sensible moves.

That defeats the purpose. If I just wanted to learn the theoretical best moves, I'd read an opening book and memorize the positions. I want to learn what non-sensible moves I'm likely to see when playing humans, and figure out how to play against them.
