Knight orf or night ord - what does it mean?

I listened to a podcast on Chess and the person kept referring to knight orf or night ord. I couldn't really understand. What does it mean and how is it spelled? Thanks!

Najdorf Variation. It is a very famous line of the Sicilian Defense:

1. e4 c5 2. Nf3 d6 3. d4 PxP 4. NxP Nf6 5. Nc3 a6!

When Miguel Najdorf played Black against Bobby Fischer in the Siegen Olympiad in 1970, Najdorf didn't play his eponymous variation... he played the Kan instead.

It was referred to as "Najdorf's night off from the Najdorf".

I've been playing the Najdorf (with both colors) for nearly fifty years.
