Knowing when to change strategies.

During many sicilian games, we all know that black should try and play queen side, while white plays on the kingside. But in many of my games, I've had to divert into a new strategy, such as trying to push in the center more, (vs kingside) and I lost due to that. Or even worse, I had to play more queenside.
I'm a big grand prix player, or closed sicilian player. (Never play open sicilian).
So what openings have you guys had to divert into a whole new strategy?
