Rating is relative. Don't think of it as height and weight, think of it like currency.
"I can buy a loaf of bread for ___ Euros or ___ USD, which price is more accurate?"

More specifically, in the rating system what matters is the difference between two players.
When a 1000 player plays a 800 the higher rated player is "expected" to win about 2 out of 3 games.
When a 3000 player plays a 2800 the higher rated player is "expected" to win about 2 out of 3. Same thing.
When a player overperforms their "expectations" their rating is adjusted upwards. When a player underperforms their rating goes down.
So what happens is a rating system rates you relative to other players in that community. The people who set up the website could start people at 1000, or 3000, it doesn't matter, the math works the same way. So some websites are higher, but the rating isn't any less accurate.
And FWIW, lichess vs chess.com, the ratings are the same somewhere around 2000 to 2200 blitz.
For lower rated players lichess is higher, and for higher rated player chess.com is higher.
This simple graph I made is a little old, but it shows the basic idea. Highly skilled GMs are rated around 3200 here and 2900 there (blitz). If you get one more data point using beginners then you can make a line.

I think chess.com uses Glicko-1 and Lichess Glicko-2.
These threads comparing sites usually get shut down, hence:

My ratings on Lichess where I've played 10% of the number of games I play here, tend to be much higher.
Also the chess.com app is vastly better, making it easier to play here when I am not at home. Even so, I've organized events (tournaments) on both sites.

I have made accounts on both chess.com and lichess. I am rated 1100 here and 1400 on lichess, which one is more accurate?
