I'm pretty sure masters know the best move over 50% of the time based on their memory/knowledge/experience and that percentage is higher for GMs.
I assume you meant sheer calculation and not sheet.

At the level starting from expert (2000) to Gm (2500) level during the average game what percentage of moves are based on memory/knowledge/experience as opposed to using sheet calculation? Eg 70% of the game moves in a game ate not based on sheet calculation. ( I just would like a rough generalization)
