Openings with queen side castling?
Sort:
Sicilian, queen's gambit, petroff, scotch, and pirc come to mind first.
Probably every opening has some variation that involves queenside castling.

Unfortunately there so many books on chess openings that you could nearly start a library 
I say unfortunately because few of them are high quality, and opening study isn't very important for most players anyway.
I don't own any books for any of the openings I play right now, so I can't recommend anything, sorry.
You can do pretty well with a database and youtube videos.
