How can I use this site to play both sides to practice different openings/responses?

You can't play yourself, if that is what you are asking. If you just want to play around with some positions you can use the Analysis Board. Probably your best way is to play in tournaments, once you have enough completed games. Find thematic ones that are in the openings you want. Then you get to play both colors in that opening against other people.

I'd like to be able to see the board from both sides simultaneously. a display that contains two boards facing in opposite directions. Like having two boards set up on a table. The same moves on each. Move by move.

Any ideas out there?

There is a small settings button in the top right corner try to click that and then you might get it ( it will say focus mode.)
