Resign after Queen Captured

Why some players always resign after their queen captured by me. I know loosing Queen is a very big problem but you can defend without Queen as well.. In a recent game My Opponent had 11 minutes on the clock and I had only 4 minutes left. But he lost queen by his blunder in the dying moments of the game. By the way he had 2 rooks, 1 bishop and 1 Knight left instead of defending the game until I ran out of time.. He resigned..
But the chances of winning are low.
Very low. So your just gonna slog the game out until you eventually loose, which is the most likely option.
At your levels, okay, maybe not. But at levels above 1200 the chances of your opponent making a very very terrible blunder and you being able to use it are slim if they have the advantage of a queen.

If you were up pieces a full scal assault would have been undefendable and being up time is barely a advantage in rapid where you gain 10 seconds every move.
