is there any advantage in sacrificing a bishop or knight for a pawn if it means your opponent will not be able to castle

Just to prevent castling, in regular situations, I would say no, but there is always exceptions. If the ensuing position will make up for the loss in material, then it might, or if his king is in a dangerous position, and castling would put him safe and you see you have a succesful attack if he doesn`t castle, then yes.
