It seems that the only time controls offered by Chess.com and every other online playing site or service I can find have only an adjustable base time for the whole game and increment. If a friend and I wanted to play with a more sophisticated control, for example the 120/40+(60+30) control used by the Grand Chess Tour, is there a site that will let us set up a game that way?
Short of meeting in person the old fashioned way, the only other suggestion I have to to visit the slowchessleague.org, which provides a place to find other people who like playing slow time control games. Someone there might know of a way to accomplish what you want.
I'm curious to find out what the longest and "most sophisticated" time control game you've ever played up until now is. I see from your archives that you played one 120 5 game here. How was that experience? Would that be too contricting for you?
