Do what you know best and try to win. Usually when I play beginners, I just exchange pieces and play endgame. Usually works...

King =infinite, lose the king lose the game.
Queen= 9
Rook= 5
Bishop= 3.5 (Bishops control more space then knights and the advantage of the two bishops is more then 2 knights.
Knight = 3
Pawn= 1
Of course those are only general values. For example a knight is worth more then a queen if it checkmates.
I agee with the grandmasters that bishops are slightly more valuable then knights.
Knights are better than bishops when you are a queen up as well.
