I think you are being narcissistic about it.  A game is a game.  You can control what you do, but trying to control what the rest of the world does, or what other people do, is not usually a realistic goal. 

See if you can start from axioms and make a truly logical proof why rematching should even be a thing.

I'd block you so we would never play but since I only queue -/+ 100 there wouldn't be any point. Maybe if you spent less time and energy on this you wouldn't be stuck with a beginner rating after 5000 games. You don't own a complete stranger's time just because they played against you once. There are a thousand reasons not to accept a rematch, each one of them is good enough.

Maybe, believe it or not, they have something else to do? During that last game someone rang them up to talk to them. Maybe they said "oh. Wait a minute I'm playing a game" and don't want to keep their caller for ages?

Maybe their limiting their games each day?
Maybe they didn't enjoy the game?
Maybe they had already started a new match?

Why should they have to rematch?

OP has a point: There should be a “match” option where you can play people multiple times...for instance, as if you were in a championship match (first to 6 points) or in the original Karpov-Kasparov style (until a third party intervenes and terminates it).

Yeah, whether they have real reason or not, they - including me but I always oblige to their demand - are entitled to decline or accept a rematch. Nobody should be forced to accept a rematch.
