Rereading the starting comment, I suppose that you could be a move away from mating the opponent even with the huge deficit...in fact it was a spectacular set of sacrifices that led to your next move.
The answer here is quite simple & it depends on your rating & that of your opponent.
If there is ANYTHING you can learn by playing on then do it. If your opponent has a low rating make him prove he knows how to win. I've seen many lower rated players accidentally allow a stalemate especially if they have a large amount of material advantage.
If you see any chance of forcing a stalemate or perpetual check etc play on. As your rating goes up you will know when to resign & when to play on but until then keep playing.
