What do you think would be a good choice for me to play against the Sicilian?

I suppose it would also depend on the kind of Sicilian, the Rossolimo makes the Accelerated Dragon a pita to play before you even get to Marocszy bind territory.

I would recommend after 1) e4 c5

To then play 2) c3

At your current level, you will likely find the Grand Prix attack to be the most fun to play.  Most players below ~1500 do not know how to handle it well and it will often lead you to quick checkmating attacks.

The Alapin is a solid option, but many times you will end up in an endgame.  If you enjoy those, go for it.

Alternatively, you could avoid trying to shortcut the Sicilian and jump headfirst into the Open Sicilian and end up with a lot of exciting games.

Bowdler is my go-to whenever I feel like playing e4 and opponent plays Sicilian.

I play 2.c3 but I don't find it easy.
