why can I beat 700-100 Elo bots relatively easily but 350+ Elo real players are a struggle?

I  am confused on  why i  can beat 700-1000 bots with relative ease (or draw) but when I  face even 350  Elo players it  is a whole deferent story. I  have noticed 700-1000 elo bots usually hang several pieces a match, and only make "single  move" moves (example: they make moves that  are not apart of a larger plan, and only make  questionable responses  that often result in hanging pieces). this  is a  whole diffrent story for 350+ elo players, who have consistently been able  to  see a checkmate or queen capture  three moves ahead  and defend it perfectly. has the overall skill of chess  players gone up or are bots just inaccurate when trying  to replicate people?

Thats because they are REAL PEOPLE not bots and beating 1000 rated bots and losing to 350 ELO players? I believe everyone would find this interesting!
