why do people move their bishop in the opening?

i'm aware that it can defend the center but i'm still confused

People might want to move the bishop in the opening to attack/defend a piece, take a piece, develop so that they can castle their king, or attack the weak pawn next to the king.

Development follows opening principles.

In both of your diagrams the bishop is developed toward the center (center control), attacks f7/f2 which is only defended by the king and it prepares to castle.
