I have been playing bullet just to see what it's all about. For beginners like myself it's not about winning but rather making your opponent run out of clock. Bullet chess would never do anything for my game except make it even worse. It's really for highly rated players. But I will say this about playing bullet. It's exciting and alot of fun.
Why is bullet chess so popular?

Like, I get blitz (especially 5/5), cause u want to play quick games...but bullet you don't have time to think of any higher level stuff...is it just to get better at opening variations?
Why would anyone play bullet over blitz? Blitz games are over in 10 minutes! lol
