But I played for a week and I can't even beat one person!

You have won games. Your rating is also already lower than what that option would start you out anyway.
How can I go back on beginner?
Your rating is already at that level in rapid and a few more games in blitz will probably get you close to it.
Once an account is created, you can't change that level and all it does is impacts your starting ratings.
I started with a higher rating than I actually was, and now my rating is lower. But whenever I try to join a tournament it says I'm sandbagging. (Trying to have a lower rating in order to face easy opponents). I think chess.com thinks my real rating was the one that I signed up with, not the one I have now. (Even though I have played most of my games as my level now).

It has to do with how far your rating has fallen over the past 90 days. Once your rating stabilizes for a while, you'll be able to join tournaments.

Thanks.
They put my rating at 650 but i’m actualy about 1100+
You have almost 70 games in blitz. So that rating is fairly accurate for the pool you're in.
I really want to change my chess level, I'm not ready for intermediate yet...
The only thing it impacts is your initial ratings. Nothing else is different. Playing games will get you to a more appropriate rating.
why can't you change to new to chess?
The skill level only impacts the estimated starting rating. It really doesn't matter what's chosen since the rating system is going to get a player close to where the should be in a few games.
