The past few weeks my player rating on daily (untimed) games hasn’t changed even when I have won or lost games. Why is this the case?

Your recent daily game have all been unrated.
Do I have any control over whether my games are considered rated or unrated?

Yes, if you're creating challenges, you can toggle them to rated or unrated under Custom. It should remember the last challenge's setting if you're using the quick challenge option.
