I am not quite sure what you are asking but on the "Start New Game" page you can click "Show more advanced options" and then you should see the option to change the game to an unrated game as well as a space to enter the rating level of the opponent you would like to play so that you can limit the opposition to a particular level of your liking.

Thanks a lot man, that statment could have jumped up and bit me and I wouldn't gave seen it (and me being a Cobra and all that!)
How can I play an easier underrated game and not have to state my game rate in "start a new game"?
