I like to play Americans

No I don't think this is useful enough, but that is a cunning mind
I don't think it is useful enough information because:
-people change their flags a lot sometimes and can lie about their country flag
-you don't know the exact time zone. For example, both California and New York are states in the USA, but are in different time zones
-some people you play might work night-shift or something; they might be awake and refreshed just like you are
Sometimes, I'll note the country flag and think "cool" I'm playing someone from x country, but I seldom give it much more thought than that. If someone chooses to be online and chooses to play (especially rated games), then assume they feel rested enough to play chess proficiently. If someone was really tired (regardless of time zone), then they would just log offline and not play.

You make some good points KesSetoKaiba, I do like to play people who are a up late when I'm rested, but I only put out random game requests, I don't deliberately ask to play Amaricans or Canadians, sometimes I get people from Europe, Asia, India etc who are probably into late morning and afternoons. I still play them. A games a game at the end of the say.
Burn..
An American (or Canadian for that matter) can always tease a Brit by pausing for a moment after they say something and then say "you must be British, you speak the language with a weird accent". (fair warning - only do this with somebody who realizes you are not being serious as otherwise a hospital visit might be imminent).
Another old saying is that the US and Britain are two countries divided by a common language.

Instead of thinking that Americans are going to be tired when you play them when it's nighttime over there, consider that they probably already got a lot of practice games in and are playing you at their best condition.
