Is it safe to take the exchange here?

FWIW, the first one doesn't look very dangerous to me. Black has good pieces in that area but it's hard to coordinate 3 of them together. I think only 2 can go to work, and it's hard to sacrifice the 3rd. In particular I think the g4 bishop is getting in the way and your knight is a good defender.
The 2nd one seems less dangerous for white. Only two attackers, and they can only combine on the light squares. I think a better idea after the sac for black is to try to use the light squares positionally and go for e.g. e5 Be6 and try to undermine the white structure with some pawn breaks... but I don't see this working either. Your f3 move covers everthing
