first of all, white can't play e5, but to e4 I respond usually c5 but sometimes e5, hoping for ruy lopez maybe.

If you don't know what the Ruy Lopez is, then asking for opening preferences of intermediate or higher players isn't going to do you a lot of good.
Get the book "Logical Chess: Move by Move" by Chernev. He goes over a few dozen master games, giving explanations for every single move. This teaches the beginner everything you'll need to know to play the opening until high intermediate level.
Just a quick question and a matter of interest...
In tournaments, when you are playing white what opening do you use?
and when you are black, how do you respond to e4 played by white...
