What is better a swiss system tournament or a round robin?

swiss, it is a small bit more fair because if everyone plays everyone some people are going to dominate

You are looking at it backwards. Round robin is fair as the dominators have the same number of games against the dominatees.

The tournament format that fits is better.

If there were 100 players in an OTB tournament it would have to be a swiss. Smaller tournaments can be either single or double round robin.
