I have just startred the 2nd Chess.com Theme Tournament - Sicilian (1001-1200) - Round 1 and why am I playing the same 3 people 2 games at the same time?

Some tournaments you play both games per opponent at the same time, others just one per opponent at a time.

Yes, in the official Chess.com tournaments you will have two games against the same opponent started at once, one with the white pieces and one with the black pieces.
