If it is about avoiding many choices, I think the way to limit them the most is playing French and going for Rubinstein variation, which comes after both 3. Nc3 and 3. Nd2 by white. The only other common white moves are exchange and advance I think.
But at my level I've found answering ...e5 and just stick to basic opening principles is probably the best choice.
