From what I've read, it seems that the King's Gambit has fallen out of favor because defensive technique at the top levels has improved considerably. Many romantic era players won by certain unsound combinations that just don't work at the top levels today.

My favourite opening. But I have read in a book that by correct defense, black can always equalize the game, and white will be in trouble, and so it is not used much by the champions. Is this true?
