frank plays carokann defense as well but I always play e5 against e4 and I try traps against d4 and they all get foiled by a bishop to f4 move that is objectively rather good as it’s a solid move, and there is WAY less theory in London.

I think Caro-Kann is a solid defense that can give some winning chances is white doesn´t understand the strategy of it. I see a lot of people play it-myself included - and it is an opening played at the top level too.
It is not for everyone. Normally positional players are more likely to play it due to its solidity and lack of pawn weaknesses.

The Tal variation is just better for white. If you play h6 and not h5 you better play with engine like accuracy or you're gonna get crushed. The e6 pawn sac by white is the main reason no one plays the Caro. Check out the game by MVL against Ding in 2013- it basically refuted the h6 variation in the advanced CK.
