Because after 20. ...Nxf6 21. Qxd4 Nxd4 black is simply a piece down, for one pawn.
But doesn't that sequence provide a better endgame for black (instead of a loss...)

No, it's just a loss, and in an even worse endgame. Two rooks vs a rook and two minors isn't terrible (although I think black is worse). If you're looking for a better endgame why not question 26...Kf8
