What makes a "great" game

There are games that are famous and replayed over and over due to their importance. Fischer vs Spasky games for example.

There are also games deemed "great" just for their greatness.

So what is it that makes games stand out among the rest based on their own merit? Is it sharp tactical play? Brilliant sacrifices? Creative non-book play?

What makes a game "immortal"?
