Play 3|0. That's the default time control, and what almost everyone plays. You're unlikely to find people playing different time controls unless you specifically coordinate with other people to play another time control.
I play 5|0 OTB. 3|0 online doesn't seem all that much faster, partly because it's easier to move pieces faster and you don't have to whack the clock.
I second that and that's also how I learned. I don't see a real need to play 5|0 online because, as somebody pointed, that's the normal time control for OTB events. I think there is a rough correspondence in the pace between the two. I didn't particularly like bullet bug played on FICS, I am old and slow, tho I guess bugGMs find their most enjoyment there. 15 mins? No way
